A working baijiu distillery built over its own archaeology: the Shuijing Street workshop site, dug in 1999 and dated from the late Yuan/early Ming, has fermented grain continuously for some 600 years and is the only excavated ancient distillery-and-tavern in China — a National Key Protected Site and on the World Heritage tentative list. Liu Jiakun's 2013 museum roofs the old pits, the still-working fermentation cellars and the live distilling floor in one hall, so you watch the process happen a few metres from the Ming-dynasty pits. Admission has been charged again since October 2024 (the museum prints no price — platforms quote about ¥40 with a guided tour and a tasting); 9:00-17:30 according to the site, 17:00 last entry; 400 m from Dongmen Bridge station.

Beat the crowds

Quiet on weekdays; Chinese tour groups arrive late morning for the tasting. Go at 9:00 when the distilling floor is busiest — the still runs in the morning — or after 15:30 when the groups have gone.
