Chengdu hotpot

A bubbling pot of beef-tallow broth loaded with dried chilli and Sichuan pepper, into which you cook everything from tripe and goose intestine to potato slices, with a sesame-oil-and-garlic dip on the side. Chengdu's version is gentler than Chongqing's and fussier about the dip. The two words that save a foreign table are 鸳鸯锅 — the half-and-half pot.

How to eatOrdering: choose the pot first. 红锅 (all red, spice 3), 鸳鸯锅 yuanyang guo (half red, half clear/mushroom — get this), or 清汤 / 菌汤 (no chilli). 'Mild' (微辣) at a hotpot house is still hot; say 微微辣 or just point at the clear side. Then tick the sheet: 毛肚 tripe (swish 8-10 seconds), 鹅肠 goose intestine (15 seconds, per the Michelin note), 黄喉, 酥肉, lotus root, potato, tofu skin, and 冰粉 or 红糖糍粑 to finish. Dip = sesame oil + garlic + cilantro, mixed at the sauce bar. Meat is beef/pork/offal by default. Pork-free tables should order beef and vegetables only; halal hotpot exists near the Huangcheng Mosque (see that entry). Chuanchuan (skewer hotpot)

串串香 · chuanchuan xiang

Hotpot for people who hate menus: everything is pre-threaded on bamboo skewers in a fridge, you grab what you want, cook it in the red pot and pay by counting sticks at the end. Chengdu invented it as the cheap student version of hotpot; the cold-pot (冷锅) style — skewers already cooked and served in cold spiced oil — is the less scalding, less fierce cousin.

How to eatMao Jiao Huo La releases the evening numbers at 16:00 sharp (platform); take a number on Dianping / Meituan as soon as they are released or you will not eat there that night. Take a basket, pull skewers from the cold cabinet (meat and vegetables are usually the same price per stick, around ¥0.7 at the Kuixinglou shop), cook them in the pot, keep the empty sticks in the cup: the bill is the stick count. Spice 3 with numbing in the standard pot; 鸳鸯锅 exists. For a gentler entry order 冷锅串串 or 钵钵鸡 (bobo ji: cooked skewers in a bowl of cold chilli-or-green-pepper oil) — no boiling, less heat. Dan dan noodles

担担面 · dandan mian

A small, dry-tossed bowl: thin noodles under crisp fried pork mince, preserved mustard greens (芽菜), chilli oil, sesame paste and a little vinegar — named for the shoulder-pole (担) hawkers of Zigong who sold it in the 1840s. Two liang (二两) is the size; it is a snack, not a meal, and the best bowls are in tiny places.

How to eatMix from the bottom before the first bite. Spice 2, light numbing; ask for 免辣 (no chilli) and you get a plain mince-and-greens bowl that is still good. Pork throughout and not halal; contains wheat, sesame, often peanut. The sibling to order at the same counter is 素椒杂酱面 (mince with sesame paste; see 'not this'), and Yang Boying's version is the Michelin-listed one. Fuqi feipian ('husband-and-wife' sliced beef)

夫妻肺片 · fuqi feipian

Thin slices of braised beef, heart, tongue, tripe and head-skin tossed in chilli oil, ground Sichuan pepper and sesame — a 1930s street cart run by a married couple, Guo Chaohua and Zhang Tianzheng, that became a shop and a China Time-honoured Brand. There is no lung in it, whatever the name says; the 'pian' is the offal slices.

How to eatA cold starter for the table, with rice or a bun; spice 2 with clear numbing, no mild version — the trick is to order it alongside something plain. Beef and beef offal only (no pork), so pork-avoiders can eat it, but the shops are not halal-certified. Long wontons (chaoshou)

龙抄手 · long chaoshou

Chengdu's wonton — thin-skinned, folded like crossed arms (抄手), served either in a clear pork-bone broth or tossed in red oil — from a shop founded in 1941 whose 'Long' is a pun on the teahouse where the founders met. The clear-broth bowl is the safest thing on any Chengdu menu.

How to eat清汤抄手 qingtang (clear soup, spice 0) or 红油抄手 hongyou (red oil, spice 1-2); a bowl of ten is a light meal. Pork filling — not halal; contains wheat and egg in the wrapper. Mapo tofu

麻婆豆腐 · mapo doufu

Soft tofu in a glossy red sauce of chilli-bean paste, ground beef, fermented black bean and a final shake of Sichuan pepper — created in 1862 at a riverside eatery by the north gate run by a pock-marked Mrs Chen, hence the name. The most famous Sichuan dish in the world, and the version at the Chen family's descendant shop is still the reference: numbing, hot, scalding, tender.

How to eatOrder it with a bowl of plain rice and spoon the tofu over — it is a rice dish, not a side. Spice 2 of 3 with strong numbing (the pepper is dusted on at the end; say 少麻 shao ma for less). No genuinely mild version exists; the vegetarian answer is the mushroom mapo at Mixun Teahouse (one Michelin star and a Green Star in the 2027 guide, plus its service award; see the vegetarian entry). Contains soy and wheat (the bean paste); beef mince as standard, pork at some kitchens, so ask if that matters. It comes out hot enough to burn: wait a minute. Chen Mapo's own eight-character standard is 麻辣烫整酥嫩鲜香 (numbing, hot, scalding, intact, crisp, tender, fresh, fragrant), 'intact' meaning the cubes stay whole (MOFCOM page).WhereChen Mapo Tofu (陈麻婆豆腐), Qinghua Road branch, 10 Qinghua Road, units 10-12, Qingyang, +86 28 8731 7216. The kitchen also does newer riffs if you want a second dish from the same pan: mapo tofu with river catfish (烧江团) or abalone (烧鲍鱼). Luomashi branch (骡马市店), 197 West Yulong Street, 11:30-14:30 and 17:00-21:00, about ¥55 (platform figures), three minutes from Luomashi metro and the one most visitors use. Twice-cooked pork (huiguorou)

回锅肉 · huiguo rou

Pork belly boiled, sliced thin, then 'returned to the wok' with Pixian chilli-bean paste, fermented black beans and garlic sprouts until the fat curls — the first dish on every Sichuan home table and the one cooks are judged by. More savoury than hot: the bean paste is the flavour, the chilli is incidental.

How to eatA main to share with rice; spice 1-2, little numbing. Fatty by design — ask for 瘦一点 if you want leaner slices. Pork, so not halal; contains soy and wheat (the paste). For the same pork with no wok heat, the cold 蒜泥白肉 (garlic pork slices) is the summer cousin.WhereAny home-style Sichuan place. Ma Wangzi (马旺子) Jinjiang, 1 Donggangshi Street, Michelin one star (list page), ¥¥, a 1923 family house from Meishan now in its fourth generation, 11:00-14:00 and 17:00-20:30 weekdays (platform hours). Zhong dumplings (sweet chilli-oil dumplings)

钟水饺 · zhong shuijiao

Ten small boiled dumplings of pure pork, no vegetable in the filling, drowned in a sweet-savoury chilli oil with garlic — an 1893 shop from Lizhi Lane whose name is now the dish. The oil is more sweet than hot, which makes it the first Sichuan chilli most foreigners actually like.

How to eatOne bowl of ten (红油 hongyou, the red version) is a snack; the 清汤 clear-broth version is the no-chilli twin. Spice 1, no numbing to speak of; garlic-forward. Cold-eaten spicy rabbit (lengchi tu)

冷吃兔 · lengchi tu

Rabbit chopped small, deep-fried dry and tossed with a mountain of chilli and Sichuan pepper, then left to cool — Zigong's 'salt-merchant' snack, made to be eaten cold from a bag on a train. Bone-in, spice 3, fiercely numbing, and the reason half the vacuum packs in the souvenir shops are rabbit.

How to eatBought by weight from cold-cut windows or vacuum-packed (see the souvenir entry); eat with fingers, mind the small bones. Spice 3, strong numbing, no mild version — the same windows sell five-spice rabbit legs instead. Garlic pork slices (suanni bairou)

Pork belly poached, chilled and sliced almost transparent, laid over cucumber and dressed with pounded garlic, sweet soy and a thread of chilli oil — the cold starter that shows off the cook's knife skills. The Lizhuang version from Yibin is the famous long-slice one; in Chengdu it is the summer opener on every table.

How to eatRoll a slice round the cucumber and eat in one bite. Spice 1 (the chilli oil is a garnish — ask for 红油少 or none), no numbing; raw garlic is the point. Pork — not halal; contains soy, wheat. Served cold and fatty: cooked through, no raw-meat concern.WherePansunshi (盘飧市), Huaxing Zheng Street, Jinjiang, the 1925 braised-and-cold-cuts house named from a Du Fu poem, China Time-honoured Brand 1995/2006. It is on the same street as Jinjiang Theatre, which is No. 54 (the company page gives Pansunshi's street but not its number; a No. 62 seen in listings is unverified; check hours in store), and its guokui-with-braised-meat counter is the queue. Kaishui baicai (cabbage in consommé)

开水白菜 · kaishui baicai

A single cabbage heart in a bowl of what looks like water and is in fact a chicken-duck-ham stock clarified for hours until it is glass-clear — the state-banquet dish that proves Sichuan cooking is about stock, not chilli. Spice zero, and the most expensive bowl of 'water' you will buy.

How to eatDrink the broth first, then the cabbage; it is served as a course in set menus rather than à la carte at most places, so ask when booking; at Yu Zhi Lan the kitchen builds the set around your restrictions — say so when booking. Contains chicken, duck and pork ham in the stock — not vegetarian despite appearances, not halal. The guide tags it family-friendly, and the room is set with the owner's own ceramics; the master-chef's signature is the hair-thin 坐杠大刀金丝面. Chaimen Hui (see kung pao) serves a related clear-stock 鸡豆花 the guide describes as 'light, dense, clear broth'. Kung pao chicken (gongbao jiding)

宫保鸡丁 · gongbao jiding

Diced chicken flash-fried with dried chillies, Sichuan pepper and peanuts in a 'scorched-chilli lychee' sauce — sweet, sour, a little hot — named for Ding Baozhen, a late-Qing governor of Sichuan whose court title was Gongbao. The overseas 'Kung Pao' with its gloopy sweet sauce and bell peppers is a different dish that borrowed the name.

How to eatA main with rice; spice 1, faint numbing — the dried chillies are for aroma and are not meant to be eaten. Contains peanut (a serious allergen note: ask for 不要花生 and check the sauce), soy, wheat. Maocai (one-person hotpot bowl)

冒菜 · maocai

Hotpot for one, cooked for you: pick vegetables, tofu and meat from the fridge, the cook blanches ('冒') them in a red spiced broth and brings the whole thing in a bowl with rice. Chengdu's lunch invention — everything hotpot gives you at a fifth of the price and without the ceremony.

How to eatFill a basket or tick a sheet, choose 微辣 / 中辣 / 特辣, or 清汤 (clear) at shops that offer it; say 干拌 for the dry-tossed version. Spice 2-3, numbing; mixed pork, beef, offal and vegetables — vegetarians can build a pure-vegetable bowl but the broth is meat-based. Contains soy, sesame, often peanut.WhereChains on every commercial street and no famous single shop; nothing verified. Nine-bowl country banquet (jiudouwan)

九斗碗(甜烧白 · 咸烧白 · 粉蒸肉) · jiudouwanJan · Feb

The wedding-and-festival banquet of the Chengdu plain: nine big bowls, mostly steamed — pork belly over sweet bean paste and glutinous rice (甜烧白), pork belly over preserved mustard (咸烧白), rice-crumb steamed pork, meatball soup — served at courtyard tables in the countryside. Almost none of it is hot, and the sweet bowl is a dessert that happens to be pork.

How to eatIn the city you order the bowls individually at steamed-dish restaurants (蒸菜馆); the full nine is a village or old-town affair (Jiezi, Dujiangyan). Spice 0-1; no numbing. Pork throughout — not halal; sweet bowl contains sugar and glutinous rice. Pork trotter soup (tihua)

A pork trotter simmered for hours with white kidney beans until the skin slides off the bone, served in a bowl of milky broth with a dip of chilli, soy and scallion on the side — the after-midnight soup of the streets round People's Park. The broth is spice zero; the heat is entirely in the saucer, so it is the best late-night non-chilli meal the city has.

How to eatOne trotter per person with rice; dip pieces in the saucer or skip it. Spice 0 in the bowl (1-2 if you dip); no numbing. Pork — not halal; collagen-heavy and rich. Qiaojiao beef soup

Beef and beef offal poached to order in a clear, herb-scented broth and served with a dry dip of chilli and salt — from Suji, a market town outside Leshan, where labourers ate it squatting on the bench with one foot up (跷脚). A bowl is spice zero until you dip; it is Sichuan's beef noodle-soup moment, minus the noodles.

How to eatOrder the mixed bowl (牛杂) or plain beef (牛肉); dip each piece in the dry chilli-salt or don't. Spice 0 in the bowl, 1-2 with the dip; no numbing. Beef only — fine for pork-avoiders; not halal-certified. Rice on the side.WhereLeshan-branded soup shops citywide; none verified. Shuizhu ('water-boiled') beef or fish

水煮牛肉 · 水煮鱼 · shuizhu niurou / shuizhu yu

The most misleading name in the cuisine: thin beef or fish slices poached in a chilli-bean broth over a bed of garlic shoots, celery and lettuce stem (the three the provincial standard names; many kitchens use bean sprouts), then buried under dried chilli and Sichuan pepper and doused with smoking oil at the table. A salt-merchants' dish from Zigong; spice 3 with heavy numbing, and there is no polite version.

How to eatFish the slices out from under the chilli layer — you do not eat the topping. Spice 3, strong numbing; contains soy, wheat, and a lot of oil. Beef version is pork-free; fish version usually uses grass carp or 花鲢 with bones. The mild sibling on the same menu is 藤椒鱼 (green-pepper fish: numbing but not hot) or a plain 清汤鱼.WhereOn every Sichuan restaurant menu. Spicy rabbit head (mala tutou)

麻辣兔头 · mala tutou

A whole rabbit head braised in chilli-and-pepper stock, eaten with the hands: split the jaw, suck the cheeks, dig out the brain. Sichuan eats most of China's rabbit and this is the dare — from Shuangliu, the airport district, whose 'Laoma' shop made it a brand. Spice 3; the five-spice (五香) version is the same head without the fire.

How to eatOrder 麻辣 (hot) or 五香 (five-spice, no chilli) by the head (about ¥10-15 each); gloves are supplied. Cheeks first, then jaw, then the tiny brain from the skull. Rabbit only (pork-free); contains soy, sesame in some braises. Not for the squeamish — that is the point.WhereNo rabbit-head shop in the city centre has been verified — the flagship is in Shuangliu, 40 minutes out. Chengdu's sweet counter: fermented glutinous rice (醪糟) warmed with tiny rice-flour balls and an egg, silver-ear fungus stewed to a syrup, and the sesame-filled tangyuan of Lai Tangyuan, a brand dated to 1894 (MOFCOM) that only settled on Zongfu Road in the 1930s. Zero chilli, faintly boozy, and the breakfast for the morning after a hotpot.

A braised duck brushed with hot maltose syrup so the skin sets into a thin, sweet, crackling shell over savoury meat — Leshan's gift to Chengdu, now sold from cold-cut windows all over the city and eaten cold by the quarter. Not a Chengdu dish, but Chengdu is where you will meet it; zero chilli.

How to eatBuy by the quarter or half from a window (they chop it into a bag), eat at room temperature within a few hours; the skin is best the day it is glazed. A whole duck cured, smoked over camphor leaves and tea, steamed, then fried until the skin is mahogany — the banquet duck of old Chengdu, fragrant rather than spicy, and the dish the Rongleyuan school of high Sichuan cooking is remembered for. Zero chilli; one of the great answers to 'is there anything not hot?'

Tibetan food on Wuhouci Heng Street

藏餐(酥油茶 · 牦牛肉 · 糌粑) · zangcan

Chengdu is the gateway city for Sichuan's Tibetan prefectures, and the streets round Wuhou Shrine are its Tibetan quarter: butter tea, yak stir-fried with flatbread, barley tsampa, momo dumplings, and lately 'Tibetan pizza'. The city's English site (carrying a Xinhua report) calls the restaurants 'a hidden gem' for more seasoned diners (its words) — and they are, almost entirely, chilli-free.

How to eatOrder the yak stir-fry with flatbread (the signature the city site names), a pot of 酥油茶 butter tea (salty, not sweet; expect that) or sweet milk tea, and momos; tsampa comes as a dough you knead yourself. The signature yak stir-fry was adapted from a Qinghai herders' mutton dish (yak instead, fewer heavy spices, three years of tuning; Xinhua), which is why almost nothing here is hot. Warm, just-set tofu pudding in its own whey, eaten two ways: the Fushun way, savoury, dipped piece by piece into a chilli-soy saucer and chased with rice; or the Chengdu snack way, sweet or salty in a bowl with crisp fried noodle threads (馓子). The tofu itself is spice zero and vegan; the saucer is where the heat lives.

How to eatSavoury 豆花饭: order a bowl of douhua, a bowl of rice and the dip (蘸水); lift tofu with the spoon, dip, eat with rice. Sweet 甜豆花: no chilli at all. Spice 0-2 depending on dipping; no numbing unless the dip has pepper. Shredded pork with wood-ear and celtuce in a sauce of pickled chilli, ginger, garlic, sugar and vinegar — 'fish-fragrant' because these are the seasonings once used for fish, not because there is any fish in it. Sweet-sour-savoury with a mild kick; the dish to order for the person who says they don't like Sichuan food.

How to eatA main with rice; spice 1, no numbing. Pork — not halal; contains soy, wheat. Vegetarian kitchens do 鱼香茄子 (aubergine) in the same sauce — often the better dish.WhereOn every menu; no house is famous for it. A clear, trembling jelly rubbed by hand from the seeds of a nightshade plant (冰粉籽) and set with lime water, served in brown-sugar syrup with hawthorn, peanut, raisins or a spoon of fermented rice — the thing every hotpot house brings at the end to put the fire out. Spice zero; the hand-rubbed (手搓) kind has bubbles, the packet kind does not.

How to eatOrder one per person at the end of hotpot or from a street window (a few yuan); eat cold with a spoon. Vegan; contains peanut and sometimes sesame as toppings — say 不要花生 if needed; gluten-free. The glass counter on every Chengdu street: duck necks, rabbit legs, chicken feet, lotus root, tofu skin and eggs simmered in a master stock, chopped and bagged to eat walking or with beer at home. The 1925 house Pansunshi turned the habit into a brand; 'spicy' (麻辣) and 'five-spice' (五香) are the two lanes, and five-spice is the chilli-free one.

How to eatPoint, they weigh and chop (¥10-30 a bag); say 五香 for no chilli, 麻辣 for the red version. Mixed pork, duck, rabbit, chicken and vegetables — vegetarians can pick lotus, tofu skin and kelp; nothing is halal. A palm-sized pancake of egg-and-flour batter baked in a tiny copper pan, folded round a filling of your choice — pork floss and pickled greens, or cream, or chocolate — from a pushcart with twenty little pans going at once. Chengdu's own, found nowhere else; the sweet fillings are spice zero, the savoury ones mildly hot.

How to eatPoint at two or three fillings (one per pancake, a few yuan each) and eat hot from the paper; kids love the cream ones. Slippery sweet-potato-starch noodles in a pork-bone broth with braised intestine, peas and a spoon of chilli oil — Chengdu's morning bowl, ordered with a guokui on the side to dip. Red (麻辣) or white (白味) broth is your choice; the intestine is the point, so order something else if offal is not.

How to eatSay 红汤 (chilli, spice 2) or 白味 / 原汤 (plain, spice 0), 小份 or 大份, and add 冒节子 (knotted small intestine) if you dare; eat with a guokui torn into the soup. Juntun guokui (stuffed flaky flatbread)

A spiral of dough rolled with spiced minced pork and scallion, griddled in oil and then finished standing on edge in the oven under the pan until the layers puff and crackle — from Juntun in Pengzhou, north of the city, and now the thing you eat with a bowl of intestine noodles. The brown-sugar (红糖) version is the sweet, chilli-free twin.

How to eatBuy one hot from the window (a few yuan) and eat it on the way, or order it with 肥肠粉; savoury ones carry pepper and a little chilli (spice 1), the sugar one none. Contains wheat, pork (savoury); sesame on the sugar version. Michelin's Bantian noodle shop bakes the sugar one over charcoal. The heritage bearer's own rule, 'one beat, two smears, three turns, six spins': the dough is slapped into an ox-tongue shape, smeared with pork and lard, rolled, turned three times in the oil pan and spun six times from edge to centre until both faces are evenly golden. A wobbling block of pea or rice starch jelly, cut into strips or shaved into spirals (旋子), dressed cold with chilli oil, vinegar, garlic and soy — the Sichuan summer street bowl. Yellow (pea), white (rice or mung), and the Chuanbei style from Nanchong with its hotter dressing; the jelly is nothing, the sauce is everything.

How to eatOne bowl (a few yuan), mixed and eaten cold; spice 2 as served, 少辣 or 白味 on request. Vegan, gluten-free (pea starch), contains sesame and sometimes peanut; the soy dressing has wheat. How to eatOrder a plate of 红糖糍粑 for the table at hotpot (eat hot, it hardens as it cools) or a bowl of 凉糕 cold in summer from a street window. A vendor hurls three lumps of warm glutinous rice dough onto a board rigged with brass discs — bang, bang, bang — they bounce into a tray of toasted soybean flour and are served under brown-sugar syrup. Street theatre first, sweet second; the food itself is a plainer cousin of Beijing's lüdagun.

How to eatBuy one portion (three pieces, a few yuan) at the stall and eat it warm on the spot; chewy and sticky, so mind small children. Glutinous-rice balls deep-fried in brown-sugar oil until the shell is dark and crackly and the inside hollow and chewy, rolled in sesame and threaded four or five to a stick — the old-street breakfast sweet that became the snack-street photograph. Zero chilli; best within a minute of leaving the oil.

How to eatOne stick per person, eaten immediately; the shell softens as it cools. Vegan; contains sesame; fried in vegetable oil at the stalls (ask if lard matters — 猪油炸吗). Noodles as thick as chopsticks, chewy enough to fight back, in a dressing of sweet reduced soy (复制酱油), chilli oil, garlic and sesame — 'sweet water' names the sauce, which is sweet first and hot second. A small bowl, eaten as a snack between a liangfen and a douhua.

How to eatOne small bowl (a few yuan); mix hard; spice 2 with the sweet taking the edge off, light numbing. Ye'er ba: a glutinous-rice dumpling, sweet (bean paste) or savoury (pork and pickled greens), steamed inside a folded leaf that perfumes it — the Chengdu-plain New Year snack that old-town steamers sell all year. Tang mabing: the flaky sesame-and-sugar cake of Jiezi old town near Qingcheng Mountain. Both spice zero, both bought by the bag on a day trip.

How to eatPeel the leaf off a ye'er ba and eat warm (sweet ones are vegan; savoury contain pork); tang mabing keeps a week — a tin is a souvenir. A milky soup of local Jianyang goat and offal, boiled hard with crucian carp for body, served with a dry chilli-salt dip and a plate of cilantro — what the whole city queues for on the winter solstice, when Xiaoguanmiao Street turns into one long soup kitchen. Spice zero in the bowl; the winter dish that happens to be mild.

How to eatOrder by the bowl or the pot with 羊杂 (offal) or 羊肉 only; season with the dry dip and cilantro; rice or a flatbread on the side. Spice 0 (1-2 if you dip); no numbing. Goat/mutton only, no pork, but the shops are not halal-certified. The Taoist mountain's table: chicken stewed with ginkgo nuts, smoked farmhouse bacon, the mountain's own green tea, and a milky kiwi liqueur — the four things every farmhouse inn at Qingcheng serves, and the reason to eat lunch on the mountain rather than back in the city. Nothing hot; the bacon is smoky, the chicken clean.

How to eatOrder the chicken soup for the table (an hour's stew, so ask on arrival), a plate of 老腊肉 (bacon steamed and sliced), and tea; the 乳酒 is a low-alcohol sweet liqueur (strength not verified — read the label) — taste before you buy a bottle. For a few weeks in March and April Chengdu menus fill with the first shoots: 香椿 (Chinese toon) scrambled with eggs, and 折耳根 (fish-mint root, houttuynia) tossed cold with chilli and vinegar — the one Sichuan flavour that divides foreigners into lovers and never-agains. Order both once; you will know which side you are on in a bite.

Chengdu's café streets

Chengdu has one of the densest café scenes in China and two streets where it clusters: Xiaotong Lane and Paotongshu Street behind Kuanzhai, and Tangpa Street south of Taikoo Li. The city's own English site has been reporting 'spicy coffee' — chilli and Sichuan-pepper lattes, plus broad-bean-paste (douban) coffee and garlic coffee (the city site's list) — as the local twist. The douban one is the Sichuan jar in a cup; order one for the story, a flat white for the coffee.

How to eatWalk the street and pick by the queue; ¥25-40 a cup. Spicy, pepper, douban or garlic coffees are a novelty (spice 1, a tingle); milk and oat alternatives are standard. Gaiwan tea in a teahouse

A lidded bowl on a saucer, a pinch of jasmine tea, and a kettle-carrier who keeps topping you up for as long as you sit — the Chengdu teahouse is the city's living room, and this is the ticket. Bitan Piaoxue is the local jasmine with the petals left in; Zhuyeqing is Emei's flat green tea for people who want no flowers. Not a dish, but you will spend more afternoons on it than on any dish.

How to eatSit, order a bowl by tea type (茉莉 jasmine is the default; ¥16-35 a bowl at Heming per platform listings, early-morning 'three-flower' tea a few yuan), tilt the lid to hold back the leaves and drink; refills of hot water are free for the day. Ear-cleaners (掏耳朵) and snack sellers work the tables — it is fine to say no. South of the centre, Tongzilin is where the consulates, international schools and the Korean community settled, and so where Chengdu keeps its Korean barbecue, bakeries and the Western restaurants that homesick residents actually use. Not a 'must' for eating Sichuan — a must for the day you cannot face another chilli.

The savoury souvenirs on every Jinli and Kuanzhai counter: Zhang Fei beef from Langzhong (sliced; the old black soot crust was dropped by the maker in 2003 — today's is plain-skinned), 'lantern-shadow' beef from Dazhou (sliced thin enough to see light through, fried crisp in chilli oil), and vacuum packs of Zigong cold rabbit. Only the lantern-shadow beef comes in a five-spice, chilli-free version.

How to eatBuy sealed packs (¥20-60), keep cool, eat within the printed date; spice 1 (Zhang Fei) to 3 (rabbit). Beef packs are pork-free but not halal-certified; rabbit contains sesame. Customs: rules on meat products differ by country and are strict almost everywhere, and they change with disease outbreaks — check your own country before you fly; the safe use is as a gift for someone you will see in China.WhereSouvenir shops at Jinli (district 2) and Kuanzhai Alleys (district 1), supermarkets and the airport; no shop verified. Pixian chilli-bean paste, hotpot base and Hanyuan pepper

郫县豆瓣 · 火锅底料 · 汉源花椒 · pixian douban

The three jars that make Sichuan food taste of Sichuan: Pixian douban (sun-fermented broad-bean-and-chilli paste from the county west of the city, aged in open vats; Pixian is now Pidu District — the paste keeps the old name, so search maps for 郫都区), a vacuum brick of hotpot base, and Hanyuan Sichuan pepper, the 'tribute pepper' that numbs cleanest. All three are in every supermarket and at the airport; together they weigh a kilo and cost under ¥100.

How to eatDouban — the paste the gazetteer calls 'the soul of Sichuan cooking': look for 鹃城 or 丹丹 brands and an age (一年 / 三年陈); use a spoonful to fry before anything else. Hotpot base: one 500 g brick makes a pot for four; the 牛油 (beef tallow) kind is the real one, 清油 the vegetable-oil kind. Pepper: 红花椒 for numbing heat, 青花椒 / 藤椒 for citrus numbing. Halal Chengdu: the Huangcheng Mosque quarter

Southwest of Tianfu Square, the streets round the Huangcheng Mosque are where Chengdu's Hui community has eaten for centuries: beef-stuffed crisp pancakes (牛肉焦饼), clear beef soups, beef noodles, and hotpot houses that swap beef tallow for vegetable oil and hang the 清真 sign. For Muslim travellers this is the only reliable lane; for everyone else it is the beef side of Sichuan.

How to eatLook for the 清真 (qingzhen, halal) sign or Arabic script on the door; ask 清真吗 if in doubt. Beef and lamb only, no pork, no alcohol on the tables. Vegetarian Chengdu: Wenshu Monastery's Xiangyuan and Mixun Teahouse

Two answers at two prices. Xiangyuan (香园) is Wenshu Monastery's own 'Zen-life' hall — a buffet of temple vegetarian food, mock-meat mapo and twice-cooked 'pork' included, for about the price of a bowl of noodles. Mixun Teahouse, in a Qing courtyard at Upper House Chengdu (formerly The Temple House), is the one-star, Green-Star version whose menu the guide says takes its inspiration from Daci Temple's vegetarian kitchen.

How to eatXiangyuan: ground-floor buffet (about ¥35 per platform notes) or à la carte upstairs; opens around 11:15 for lunch; no alcohol, no garlic-onion at strict tables. Mixun: book; mushroom mapo tofu with guokui and hand-made spinach dan dan noodles are the guide's picks; Chinese afternoon tea too. The Green Star citation is the chef's own line: the menu is 'farm to table', buying local wine and tea 'to support the livelihoods of farmers near the giant-panda habitat' (Steven Tang).
